About Green Olives

Jeremiah (11:16) described prosperous Israel as "a green olive tree, fair, and of goodly fruit."

Olives have been cultivated since prehistoric times in Asia Minor. From there, they spread all over the world. Today they are commercially produced in Spain, Italy, France, Greece, Tunisia, Morocco, Turkey, Portugal, China, Chile, Peru, Brazil, Mexico, Angola, South Africa, Uruguay, Afghanistan, Australia, New Zealand, and California. Hands down, though, until this day, the Mediterranean area produces the most. Of the some 800 million olive trees growing on earth at this moment, 93 percent are growing in the Mediterranean area.

Technically, there are really no different types of olives, the difference in their colors come from the moment in their growth when they are picked. Black olives are fully ripe.

Green Olives are picked before they have ripened and are quite bitter in their natural state. They are typically subjected to fermentation or cured with lye or brine to be made more palatable. Green olives are soaked in a solution of sodium hydroxide and then washed thoroughly in water to remove oleuropein, a naturally bitter carbohydrate. Then green olives may be allowed to ferment before they are packed in a brine solution. Green olives that do not ferment before packing taste as mild as black olives.
